Picadillo Chaffles
/Picadillo is basically Puerto Rican Chilli without beans. It’s perfectly Keto friendly as long as you don’t serve it traditionally with rice! I have combined an authentic recipe with chaffles and customized a bit for an awesome easy to make meal!
Ingredients for Picadillo:
2 lbs Ground Beef (Use grass fed when possible)
1 packet of Sazon Culantro y Achioti seasoning
1 packet of Goya ham seasoning
1 tsp of cumin
1 tsp of oregano
8 ounce can of tomato sace
2 garlic cloves
2 TBSLP of Sofrito (I use the Jar one from the grocery store but plan on making from scratch soon. When I do I will post recipe)
Handful of cilantro
3-4 TBLSP Goya Adobo Seasoning
Cooking spray (I use coconut oil spray)
1/2 Jar of Olives with Pomentios
Chaffle Ingredients (makes 4)
2 Eggs
1 Cup shredded mozzarella cheese
Instructions for Picadillo
Spray bottom of large pot with cooking spray
Place ground beef in pot and place on 7 (Keep there until the boil step)
Season beef with roughly 2 TBSLP of Adobo Goya and cut into meet and move around with wooden spoon to chop up.
Then add roughly another 2 TSBLSP of adobo Goya and keep cutting into it with the spoon and mixing
Add 1 packet of Ham seasoning and continue to stir and chop
Add 2 TBSLP of Sofrito and stir
Add two garlic cloves minced and stir
Add 1 Packet of Sazon Culantro
Add olives (A little of the liquid is ok)
Add 1 tsp of oregano
Add 1 tsp of cumin
Add 8oz can of tomato sauce (use no sugar added sauce)
Add 1 Cup of Water
Add cilantro chopped
Bring it to a boil, once it comes to a boil cover and set a 3 and cook for 10 minutes
Drain most of the liquid (but not all).
Instructions for Chaffle
Preheat Dash waffle maker
In a bowl mix 1/2 cup cheese with 1 egg by hand with a spatula.
Pour 1/2 mix into waffle maker and cook for about 5 minutes or until no more steaming
Fold Chaffle in half and let sit for 5 minutes and make as many chaffles as you need
Add picadillo with fresh toppings. Suggestions are onions, cilantro, sour cream, cheese, etc.
