This is my favorite chili and I learned it from a friend who won an award for this chili recipe. I converted it to low carb because originally it contained a lot of beans and I replaced it with the sausage. If you make it let me know what you think!
Ingredients:
1 Large Onion
1 Large Green Pepper
Salt and Black Pepper To Taste
2 TBLSP Olive Oil
3 Cloves Garlic
1 Habanero Pepper
1 Jalapeno Pepper
1 or 2 Chipotle Peppers (To Taste)
Or Chipotle Chili Powder (1-2 TSP to taste)
1 32 Ounce Can Tomato Puree
1 16 Ounce Can Diced or Crushed Tomatoes
2 TBLSP Chili Powder
2 TBLSP Ground Cumin
1/2 TSP Cinnamon
1/2 TSP Ground Thyme
2 Pounds Ground Beef
1 Pound Sweet Italian Sausage
Instructions
Dice onion and green pepper and finely dice garlic. Finely dice peppers and remove inner flesh if a milder chili is desired.
In a large dutch oven or similar pan, sauté onions, green peppers, salt and pepper in olive oil until onions are translucent. Add garlic and hot peppers and sauté until garlic is aromatic.
Add tomatoes and spices, bring the mixture to a low simmer for 1 hour, stirring occasionally`.
While chili simmers cook. protein in another pot and pan. After sausage is cooked, dice into small pieces.
Add meat to chili and stir. Simmer on low for the rest of the time stirring occasionally.
Before serving use a spatula to stir the spices.
Let cool for 5 min and prepare potential toppings (Such as cheese, onions, cilantro, sour cream, etc)
